Simple Gifts

Listening to Appalachian Spring … it premiered in 1944 … a long time ago … wartime. Aaron Copeland received the Pulitzer Prize for Music for this orchestral work. Appalachian Spring includes the Shaker song “Simple Gifts” (written in 1848, attributed to Joseph Brackett). 1848 … also a time of revolutions and war.
‘Tis the gift to be simple, ’tis the gift to be free
‘Tis the gift to come down where we ought to be,
And when we find ourselves in the place just right,
‘Twill be in the valley of love and delight.

Custards are simple. Pretty much milk or cream, and egg. A simple gift indeed!

Wikipedia describes crème brûlée … also known as burnt cream … is a dessert consisting of a rich custard base topped with a layer of hardened caramelized sugar. It is normally served slightly chilled; the heat from the caramelizing process tends to warm the top of the custard, while leaving the center cool. The custard base is generally flavored with vanilla in French cuisine but can have other flavorings. It is sometimes garnished with fruit.

Yum. Had one that was Earl Gray flavored recently.

Here’s another example of the same simple custard, different format …

And shown above yet another … Hong Kong egg tarts “don tot” … same thing. Delicious. Sweet. Simple.

Yup … simple things in simple places … where we ought to be.
